Fresh Ice cream
This is so simple and takes less than 30 minutes to make
you'll need either an electric beater or a whisk and a very strong arm, two medium sized bowls preferably not plastic as metal and ceramic work better when beating eggs and cream. This ice cream is not cooked so great for even the kids to do with a bit of supervision. Always remember with eggs to that they need to be at room temperature so if you are one to put your eggs in the fridge, take them out a few hours before making the ice cream.
Ingredients you will need:
3 medium or 4 small eggs (separated)
300 grams whipping cream
3 ounces or 75 grams of castor sugar
1/2 tsp Vanilla extract (optional)
OR Whatever you want to flavour it with, this ingredient gets folded in at the end
1: In one bowl whip the cream (im going to give you the best tip ever for whipping cream that will stay whip in the fridge for days) Begin whipping cream on lowest setting slowly increasing the speed over ten minutes or until soft peaks form, be careful not to over beat. Clean and dry the whisk or beater attachments thoroughly, to whip the meringue base.
2: Whip the egg whites till stiff peaks form when you lift the beater out. Gradually add the sugar to the egg white while continually beating until all sugar is added and dissolved you can test this when you run a bit between your fingers and it feels silky not grainy.
3: Fold the egg whites into the whipped cream and if making vanilla add the vanilla here or anything else you want to add until it is mixed evenly.
4: Pour into a freezer proof container with a lid and place in the freezer. Ice cream is ready to eat in only an hour and yum yum yummy
Enjoy, we always do. This is also a great one to whip up at Christmas as it is relatively inexpensive and so quick to make.

Other ingredients you might want to add
Peanut butter and brittle
Homemade lumps of hokey pokey
Fold through some fruit couli like lines of it through the ice cream
Our broken up Ginger Crunchies go well to mixed through
Pistaccios or other nuts, roughly chopped
1/4 cup of Penacolada, Baileys, liqour
Lots of flavours can be added, however try not to add to much in liquid form as this can form crystals in the ice cream when it freezes
